Recording a conversation you are taking part in is generally lawful in New Zealand. That covers the ordinary reasons for buying a recorder: your own meetings, your own interviews, a call you are on, dictation, and keeping a record of something that was said to you. Telling the other people is good practice, and it is what makes a recording useful later rather than contentious.
The limit is conversations you are not part of. Recording or listening to a private communication you are not a party to is interception under section 216B of the Crimes Act 1961, and it is an offence. If you record for a business or at work, the Privacy Act 2020 applies as well. Do not use this to record other people's private conversations. This is general information, not legal advice.
